What are carbohydrates?

Carbohydrate is a food group that has been celebrated in some periods and blamed in others. It is in fact the shared name of a very wide family, running from lentils to sweetened drinks, and that breadth makes one-sentence verdicts meaningless.

Short answer

Carbohydrates are a broad food group covering sugars, starches and fibre, and they are the energy source the body uses most easily, providing about 4 kcal per gram. Lentils and a fizzy drink sit in the same group, yet their effects in the body are very different. The meaningful question is therefore not whether carbohydrate is good or bad but which source, and how much.

A wide family: sugars, starches, fibre

Carbohydrates come to us in three main forms. Sugars such as glucose, fructose and sucrose are the smallest building blocks; they occur naturally in fruit and milk and are added to many products. Starches are many glucose units bonded in chains, and are found in grains, pulses and potatoes. Fibre is the type of carbohydrate that digestive enzymes cannot break down; instead of turning into energy it supports the health of the digestive system, and it is described in detail in the fibre guide.

What does it do in the body?

Digested carbohydrates are converted into glucose and provide about 4 kcal of energy per gram. Glucose is a practical fuel for the brain, for the nervous system and, during hard effort, for the muscles. What is not used is stored as glycogen in the liver and muscles, and that store is the ready energy source that comes into play during exercise. The body can produce energy by other routes when it needs to, but carbohydrate is the most common and accessible source of energy in daily life.

Why does the source matter so much?

The same amount of carbohydrate arrives in a completely different package depending on the food it comes from. A slice of wholemeal bread carries fibre, B vitamins and minerals, and is digested relatively slowly. Taking the same carbohydrate from liquid sugar means a package with no fibre, fast digestion and little in the way of nutrients. As the degree of processing rises, fibre and mineral content usually falls and the speed of digestion rises. Dietary guidelines therefore recommend bringing wholegrains, pulses, vegetables and fruit to the fore and limiting added sugar, rather than restricting carbohydrate as such.

The carbohydrate line in the nutrition table gives the total, and the sugars line just below shows how much of it comes from sugars. The sugars line includes natural and added sugar together, so to see the split you need to look at the ingredients list. Names such as glucose syrup, invert sugar and maltose all act as added sugar. Speed of digestion and fullness: the same gram behaving differently

The same amount of carbohydrate is processed at different speeds depending on its package. Sources that are high in fibre and lightly processed, such as pulses, wholegrains and vegetables, are digested more slowly; the rise in blood sugar is gentler and fullness lasts longer. Sources in which the fibre has been separated out and the sugar freed, such as white flour products and sweetened drinks, are processed quickly; fullness is short-lived and the wish to eat again can return within a short interval. Concepts such as the glycaemic index try to measure this difference, but the practical rule in daily life is simpler: eating carbohydrate together with fibre, protein and a little fat naturally slows digestion. Lentils added beside white rice, cheese alongside bread, or a few walnuts eaten with fruit turn the same meal into a more balanced whole. The question is not only how much carbohydrate but what it comes with; the company on the plate determines how the carbohydrate behaves.

A note on carbohydrate hostility

Arguments for cutting carbohydrate altogether become popular from time to time. A low-carbohydrate way of eating may be a workable choice for some people, but that does not mean carbohydrate is a problem for everyone. Most traditional dietary patterns are built on grains, pulses and vegetables, that is, on carbohydrate-led foundations. If a particular health condition such as diabetes requires carbohydrate to be managed, that management should be carried out with a doctor and a dietitian; general content does not replace individual advice.

In short, carbohydrate is neither hero nor culprit; it is the oldest and widest family at the table. A pattern that puts wholegrains, pulses and vegetables at the centre and keeps added sugar to the side is the plain formula for working with the strongest members of that family.

Frequently asked questions

Is the simple and complex carbohydrate distinction still valid?

As a chemical distinction it is valid, but it is not enough on its own. Fruit contains “simple” sugar yet arrives with fibre and vitamins, so the current approach looks at the food as a whole rather than at molecular structure.

Is it harmful to eat carbohydrate in the evening?

The daily total and the overall pattern matter more than the hour itself. There is no strong evidence that eating carbohydrate in the evening has an adverse effect in itself.

What happens if I cut out bread?

Bread is not indispensable in itself, though wholemeal bread contributes fibre and B vitamins. Someone who reduces bread can take those elements from other wholegrains and pulses; what matters is the balance of the whole.

Is fruit sugar the same as added sugar?

They are similar at molecular level but the package differs: fruit comes with fibre, water and vitamins, and the authorities support fruit consumption. What is recommended to be limited is the sugar added to products.
