The difference between raw and cooked weight

The same hundred grams of rice appears to carry very different calorie figures raw and cooked. What changes is not the food but the water in it, and knowing that difference matters for reading labels and recipes correctly.

Short answer

Cooking does not change the energy content of a food to any great extent; it changes its weight. Rice and pasta take up water and get heavier, while meat loses water and gets lighter, so 100 g of raw rice and 100 g of cooked rice are not the same thing. The way to avoid confusion is to decide which state you are working with and then stay with it.

What changes is water, not calories

The energy in a food comes from the carbohydrate, protein and fat it contains. Boiling and cooking largely preserve those components; what really changes is the water content. How much precision is really needed?
